The previous two answers need to be read very carefully. Yes, the crater is safe from a security perspective, and yes on the roads, a regular car is fine. But, to see the highlights of the crater, you need to go off road, and this cannot be done without a 4x4. And, it is very hard for a novice to navigate off the paved roads. So, the bottom line is yes, you can see some of the crater from a car on the paved roads, but to see the rest, you must have a guide and a 4x4.

Ein Gedi is a beautiful place near the Dead Sea. It was one of our favourite places that we hiked. You will need a couple of days (minimum) for Jerusalem. Take the tunnels, go to Yad Vashem, the Israel Museum (you could spend an entire day there). We were in Israel touring for 3 weeks and we still feel we needed more time. Eight days seems like a lot but there is tons to see in this little country. If you can possibly take an extra day or two, going to Petra and Wadi Rum in Jordan is incredible (a hop, skip and jump from Eilat).

Before you look for partners you should be aware of the date range you mentioned. This year the Jewish holidays turn out on October (Changes from year to year as they are based on the Hebrew calendar which is different than the Gregorian one). The Jewish new year is from 2-4 of October. Busy with travelers, steep sleeping prices (probably most are already booked) and limited public transportation. Better to be in a metropolitan area (like Tel Aviv). The 10-11 is Yom Kippur. The country shuts down for 24 hours. Literally shuts down. No cars, no supermarkets, no TV no nothing. Even the Israeli air space is closed. If you look for an experience you can see people playing soccer on the Ayalon highway (Israel busiest road crossing Tel Aviv). You can walk there yourself. From the 16-24 is Sukkot. This is the busiest holiday we have. It's insane. The Ramon Crater will be insane (packed with families). If you're a trekker your best bet will be to find an isolated trek (one of the "rout Israel") that takes a few days. Back to the crater. Date wise the best time to plan a visit will be 5-9 of October. Considered low season in most places and your best chances to enjoy the crater's beauty without too big a crowd. YES! There is a star gazing EVENING of 2-3 hours, led by a retired American amateur astronomer, Ira Machevsky, the self-styled "Star Man of Mitzpe Ramon." You can search on internet but the best recommendations come from his tripadvisor reviews from Mitzpe Ramon under the title "Astronomy Israel." And by the way, MY review from 2014 is the best one.
